URBAN CHEESE MAKER

William Oglethorpe is the proprietor of Kappacasein Dairy, a cheese making operation in the arches under the main railway line out of London Bridge station. He also operates a stall selling his cheese, including toasted cheese sandwiches and raclette, in Borough Market. Oglethorpe was brought up in Zambia, and one day a Swiss missionary asked William’s father whether he would like William to go to an agricultural school in Switzerland. This he did, followed by a traning in cheese making in Provence. He worked for several years at Neal’s Yard Dairy before setting up his own cheese making business.
